The new Oyster at Byron Bay’s Hotel Marvell set to catch seafood lovers this summer
Byron Bay is set to welcome a fresh seafood destination with the opening of Byron Bay Oyster Bar & Seafood Restaurant at Hotel Marvell next Tuesday.
The new venue captures the charm of oyster bars found in New England and New York and leans into the coastal luxury of Byron Bay, offering an elevated dining experience for locals and visitors alike.
The Marvell Street restaurant promises an exceptional focus on oysters and seafood from across Australia and New Zealand and will house a state-of-the-art land-based oyster tank, capable of holding up to 500 dozen oysters at a time.
“Our state-of-the-art oyster tank uses carefully filtered water collected on a king tide from nearby Brunswick Heads to naturally cleanse the oysters of any impurities,” Hotel Marvell general manager James Pearce said.
“It also regenerates them to the pristine condition that’s usually reserved for oysters consumed straight from the water at a farm.
“This means that every single oyster we’re serving at Byron Bay Oyster Bar & Seafood Restaurant is as fresh and pure as nature intended. Nowhere else in Byron Bay will you find oysters as fresh as those that we’ll be shucking.”
Beyond oysters, the menu highlights seasonal seafood and simple, elegant preparations. Diners can expect oysters in cold styles like natural, mignonette, and bloody mary, as well as hot options like Kilpatrick and mornay.
A raw bar featuring caviar trios, trout tartare, and tuna carpaccio will complement an array of mains, including lobster mornay and confit King Ora salmon. For those seeking a heartier option, the grill menu offers swordfish loin, pork chop, and ribeye, served with a range of decadent sauces.
The restaurant, replacing Bonito in Hotel Marvell’s stylish indoor-outdoor space, captures a warm, relaxed ambiance that mirrors the coastal town’s charm. With rich ochre tones and lush greenery, the space is designed to encourage long, leisurely meals or quick stops for a drink and oysters.
Byron Bay Oyster Bar & Seafood Restaurant will open for lunch and dinner Tuesday through Saturday, with a special Oyster Hour from 5-6 pm featuring $3 oysters. A daily breakfast menu is also available.
This fresh seafood, refined simplicity, and Hotel Marvell’s laid-back luxury is poised to make it a must-visit spot for any foodie visiting Byron Bay.
