Welcome to the Nibler’s first ever Featured Venue!

Now, without further delay, here is our premiere stand out venue, The Paramount House Hotel!


Nestled deep within the heart of Surry Hills is a venue like no other.

The Paramount House Hotel is located in the former headquarters of Paramount Picture Studios, alongside Golden Age Cinema, Paramount Coffee Project, the Office Space and Paramount Recreation Club.

You’ll notice the iconic copper clad roof first, which is a shining beacon on Commonwealth street, guiding your way to this eclectic converted warehouse boutique hotel.

The hotel’s 29 rooms and atrium-style lobby blend heritage with new. Restored ceilings, windows and brick walls are complemented by fresh timber floors and terrazzo-tiled bathrooms.

Each room has its own sense of personality and design details, but all are dressed with French linen sheets, Aesop amenities, Seljak wool blankets and artwork curated by local gallery China Heights. Indoor and outdoor plants in all rooms speak to the hotel’s appreciation for detail and tactile experiences. Guests can choose from Everyday or Sunny rooms.

As well as Lofts and two spacious Mack Daddy suites. Lofts feature floor to ceiling glass windows and beds hovering above lounges via a mezzanine level.

Japanese-style timber baths feature in a selection of rooms. Wake up to a thermos of filter coffee hanging on your door as part of Paramount Coffee Project’s breakfast and lunch room service.

Paramount House Hotel is a design project by the Melbourne-based Breathe Architecture. It is the first accommodation offering by owners Russell Beard, Ping Jin Ng and Mark Dundon; a team formed through their love of hospitality.

Together they run Paramount Coffee Project and Bondi Hall in Sydney, and PCPLA in Los Angeles. Beard runs the Surry Hills micro-roaster and cafe Rueben Hills.

Loft

Dundon leads much-loved Melbourne coffee brand Seven Seeds. This sense of hospitality extends to the hotel room mini-bars which are filled with LPs Quality Meats, Tom Shobbrook wines and more.

A selection of drinks are provided to guests on arrival including a sour by the Marrickville brewery Wildflower.
