InterContinental Sydney Coogee Beach has officially unveiled its oceanfront pool deck, marking a major milestone in the property’s phased launch and signalling the next chapter in its multi-million-dollar transformation.
The launch event, held last night in front of 150 guests, showcased the hotel’s elevated leisure offering, positioning the new pool deck as a standout addition to Sydney’s beachfront luxury scene. Guests were treated to Champagne, caviar from Two Providores, a sashimi bar including a whole yellowfin tuna from GetFish and charcuterie, alongside poolside entertainment that transitioned seamlessly from sunset into the evening.
Attendees included Paul Salter of Salter Brothers, Matthew Tripolone from IHG Hotels & Resorts, Dr Marjorie O’Neill MP and a mix of industry stakeholders, media and local figures, underscoring strong support for the property.
The unveiling introduces a suite of new guest experiences, including an ocean-facing infinity pool and terrace, Club InterContinental and pickleball courts, with the highly anticipated Èliva Spa slated to open in early May.

Since opening in December, the hotel’s redesign by Woods Bagot has delivered a fresh take on coastal luxury along Coogee Beach. The newly launched pool deck sits at the centre of the experience, featuring a heated infinity-edge pool, private cabanas and layered seating designed for all-day use. Adjustable screening and pergola structures create dynamic light throughout the day, while landscaped planting softens the space without compromising ocean views.
The adjoining dining offering reflects relaxed beachside living, with a menu spanning classics and lighter options, including new ‘Nourish Bowls’ available throughout the hotel.
Club InterContinental adds a premium, private dimension to the stay, offering a light-filled lounge with ocean views, all-day refreshments and a secluded outdoor terrace. The space is designed to cater to a range of guest needs, from informal meetings to relaxed downtime.
Further enhancing the lifestyle proposition, the addition of pickleball courts introduces a unique recreational element rarely seen in Sydney hotels, aligning with the Eastern Suburbs’ focus on outdoor living and social connection.
Wellness will take centre stage with the opening of Èliva Spa, set to deliver a holistic, experience-led approach. Facilities will include magnesium pools, infrared and salt saunas, cold plunges and advanced recovery technologies, alongside tailored treatments designed to support rest, recovery and rejuvenation.

“These new experiences reflect our vision to create a refined yet relaxed coastal retreat where guests can connect with Coogee’s natural beauty while enjoying a truly elevated stay,” said portfolio general manager Melinda Lampier.
Together with Shutters Restaurant & Bar, which opened in December, the latest additions position the hotel as a lifestyle destination where design, dining and wellness converge. Rick Stein has also opened a restaurant in the complex.
Beyond the property, curated concierge-led experiences encourage guests to explore the local area, from snorkelling at Gordons Bay to swims at Wylie’s Baths, reinforcing a deeper connection to the Coogee coastline.
