Jean-Michel Cousteau Resort Fiji has appointed Australian Shaun Thomson as executive chef following the property’s multi-million-dollar renewal and reopening in April 2026.

Thomson brings 19 years of experience across Australia, Fiji, Bali and the wider Asia-Pacific region. He has previously worked at Rockpool Bar & Grill under Neil Perry, Flying Fish Fiji under Peter Kuruvita, Kokomo Private Island under Cory Campbell, and The Ungasan Clifftop Resort in Bali.

In the new role, Thomson will lead all dining experiences at the Savusavu resort, working with local farmers, fishermen and artisan producers to develop seasonal menus built around seafood, tropical fruits, native herbs and organic vegetables from the Vanua Levu region.

“My vision is to create dining experiences that are deeply rooted in place,” Thomson said.

Menus will reflect the seasons and showcase produce from Savusavu and the surrounding region, he added, with sustainability and authenticity central to the approach.
