KPAT Hotels has appointed former Calile Hotel executive chef Marky Godbeer to lead Sully’s Rooftop at the new Avani Mooloolaba Beach Hotel, strengthening the property’s culinary leadership ahead of its opening in April 2026.

Godbeer will oversee the culinary direction for Sully’s Rooftop, the hotel’s signature restaurant located on level 12 and designed to deliver modern Australian rooftop dining with panoramic views across Mooloolaba Beach and the Pacific Ocean.

He brings extensive experience across international and Australian hospitality, having trained in a Michelin-starred restaurant in England before working as head chef on luxury yachts in the South Pacific. After relocating to Australia, he worked at Longitude 131° at Uluru and Silky Oaks Lodge in the Daintree Rainforest, and most recently served as Executive Chef at Brisbane’s Calile Hotel, managing large-scale food and beverage operations.

The appointment forms part of KPAT Hotels’ strategy to position Sully’s as a destination dining venue for both hotel guests and the broader Sunshine Coast community.

“Marky brings a depth of culinary experience developed across some of Australia’s most respected hospitality destinations,” KPAT Hotels managing director Kenneth Wagner said.

“His approach to seasonal produce, team leadership and destination-driven dining aligns strongly with the vision we have for Sully’s Rooftop.”

Scheduled to open on 11 May 2026, the 180-room Avani Mooloolaba Beach Hotel marks the first full-service internationally branded hotel to open on the Sunshine Coast in more than four decades, delivering significant new accommodation supply into the region’s tourism market.

At Sully’s, Godbeer leads a menu centred on seasonal ingredients, locally sourced seafood and shareable modern Australian dishes, reflecting both the coastal setting and the region’s strong agricultural network.

Beyond the menu itself, the venue has been designed to create a social dining environment where food, setting and atmosphere work together to shape the guest experience.

Godbeer said his goal is to develop a restaurant that becomes part of the local rhythm of Mooloolaba, attracting both visitors and residents looking for a relaxed yet distinctive rooftop dining experience.

“We want Sully’s to feel welcoming and energetic,” Godbeer said. “It’s about creating a space where people can enjoy great food, great views and great company – whether that’s a casual drink and a few shared plates or a full evening around the table.”

“Dining will be a defining part of the experience at Avani Mooloolaba Beach Hotel,” Wagner added. “With Marky leading the kitchen, we are confident Sully’s will quickly establish itself as a standout venue on the Sunshine Coast dining scene.”

In addition to Godbear’s appointment, KPAT Hotels have announced today that Iain Guthrie has been appointed as Venue Manager and leads the front-of-house experience, drawing on his time within Merivale’s Establishment Precinct – one of Australia’s most recognised hospitality environments.

Developed, owned and operated by KPAT Hotels under a franchise agreement with Minor Hotels, the 180-room property represents a significant investment in the region’s tourism infrastructure and hospitality sector.
