Mondrian Gold Coast will be home to a new restaurant & beach club

Mondrian Gold Coast will mark its opening next month with the debut of two new restaurants, Haven and LiTO.

Haven is the new restaurant and beach club led by executive chef Aaron Teece (formerly of EST., Felix, Manly Pavilion, and Studio Neon founder), with the venue offering a refined yet relaxed all-day experience where provenance meets play.

Haven cuisine is grounded in the coastline, with menus shaped by seafood from Cairns, the Sunshine Coast and Northern NSW, alongside premium paddock-sourced meats and seasonal produce from the hinterland. A woodfire grill sits at the heart of the kitchen, adding depth and character to dishes across both the restaurant and poolside menus.

“I want people to feel the season and the source with every bite, because when ingredients are respected, simplicity speaks loudest,” Teece said. “We’re not trying to overwork anything — the quality of the produce does the talking. It’s all about creating food that feels grounded but still sparks a sense of occasion in this beautiful part of the world.”

At Haven, the interiors Designed by Alexander &CO., combine Mediterranean texture with Australian ease – with indoor and alfresco dining, plus a semi-private chef’s table beside the open wood-fired kitchen.

Spanning a third-floor dining room, pool club, private cabanas and sunset bar at Mondrian Gold Coast, Haven is designed to shift with the day, from sun-drenched lunches to twilight drinks and lively evenings. The venue combines effortless hospitality with a sense of occasion, elevated by Pacific Ocean views and a soundtrack of curated playlists, DJs and live performances.

The Haven drinks menu offers an extensive champagne selection, Australian and international wines, a coastal-inspired cocktail program and a dedicated agave menu featuring tequila, mezcal, raicilla and bacanora. Drinks are poured throughout the venue, whether poolside in a cabana, at the sunset bar or over lunch in the restaurant.

LiTO is an all-day dining destination led by an Italian-born chef.

LiTO is an all-day dining destination led by Italian-born head chef, Andrea Morigi (formerly of Uccello and Jimmy’s Falafels). From coffees to aperitivo hour, LiTO blends seasonality, simplicity and connection in a space designed for everything from slow dinners to post-surf espressos.

LiTO Menus celebrate generous, produce-forward Italian cuisine with handmade pasta, slow-cooked porchetta, rotisserie chicken, wood-fired breads and signature table-side tiramisu. Mornings offer Allpress coffee and Italian-influenced breakfast plates, while the bar menu features rotating local and Italian wines, classic aperitivos and coastal-inspired cocktails.

“It’s about joy on the plate – handmade, wholehearted, relaxed. Like the kind of meal best shared among friends with something good in the glass,” Morigi said. “LiTO invites you to settle in without watching the clock — for a long lunch, a slow dinner or anything in between.”

The LiTO wine list rotates with the seasons, spotlighting both Australian and Italian producers, while classic aperitivos, spritzes and signature cocktails round out a bar menu made to suit any moment of the day.

Haven and LiTO will begin to welcome guests from 5 June at its home within Mondrian Gold Coast – the first Mondrian hotel in Australia, powered by Ennismore in collaboration with Vitale Property Group.

Haven combines combine Mediterranean texture with Australian ease.
