Signature Hotel Management Group CEO Dimitri Karam and his brother, award-winning chef Dany Karam, are forming a formidable partnership in hotel management and food and beverage operations starting with Novotel Sydney Cabramatta.
Dimitri, current president of the Liverpool Chamber of Commerce & Industry and a former general manager of InterContinental Hotels Group, revealed the partnership when unveiling the new Novotel Sydney Cabramatta, the latest addition to south west Sydney’s hospitality and tourism landscape, set to open in mid-2025.
The development will feature two signature restaurants by Dany (ex Black Bar & Grill, The Star, Sydney). Dimitri also indicated that Dany will be involved in Sydney developer ALAND’s new premium voco-branded hotel being constructed for IHG Hotels & Resorts as part of the developer’s $375 million apartment project in Gosford, on the NSW Central Coast.
Former NSW Minister and Member for Penrith, Stuart Ayres said the Novotel Sydney Cabramatta was an exciting new development in Sydney’s south west.

Dany is also culinary ambassador for two new restaurants for Cabra-Vale Diggers Group which is currently constructing a multi-stage redevelopment that includes a $117 million hotel and entertainment complex, on the site of a former police station in Sydney’s southwest.
The 32,900sqm Canley Vale site, formerly the Cabramatta Police Station, is being transformed into a 4.5-star hotel and entertainment complex. At the heart of the development is a newly constructed 140-room hotel tower that will include a luxury retreat with a pool and day spa.
The tower will also have a business hub, function rooms and a ballroom with seating for up to 1000 people.
