Renowned Lotus Dining Group will offer a new dining experience at Southern Highlands property, Park Proxi Gibraltar Bowral, Seibu Prince Hotels & Resorts has announced.
Scheduled to open on 1 September, Lotus will bring its acclaimed Asian cuisine to the Southern Highlands with a hyper-local twist. Diners can expect a blend of favourite Lotus dishes and beverages alongside exciting new menu items showcasing the region’s amazing produce. The on-site Lotus restaurant will be complemented by Marilo, a new contemporary fusion offering from Lotus Dining Group.
Marilo will expand the food and beverage offerings across the hotel, including in-room dining, Harvey’s bar, and the Conference & Events packages. Executive chef Tiffany Jones will lead the culinary team, collaborating with Lotus’ executive chef Steve Wu to develop a focus on hyper-local ingredients while nurturing a new generation of hospitality talent.
Additionally, guests can expect Marilo to offer a diverse range of contemporary Australian cuisine, thoughtfully curated to appeal to a wide variety of palates. The hotel and Lotus will partner to create a year-round calendar of events celebrating the local area with exceptional food and wine.
Lotus now has eight venues, including Sydney flagships Lotus Barangaroo, Lotus Double Bay, Lotus the Galeries, Pearl Dining in Circular Quay and the highly successful Lotus Dumpling Bar brand which, since its 2012 debut, has expanded to two more locations. Lotus has also partnered with Mariposa to launch a new concept brand Marilo with locations in Pyrmont, Upper Deck Pirrama and now Park Proxi, Bowral,
As the featured on-site dining option, Lotus welcomes guests and locals alike to experience the group’s renowned quality and nuanced take on Chinese cuisine. With a vision to become a sought-after addition to the Highlands food scene, Lotus will be open for breakfast, lunch, and dinner. Guests can also enjoy picnic baskets, perfect for exploring the area, along with a range of takeaway options available at the hotel’s golf pro shop.
Park Proxi Gibraltar Bowral, the first Australian property under the Park Proxi brand, opened last year. It offers premium accommodation with spacious rooms and suites boasting floor-to-ceiling panoramic views of Mount Gibraltar and the surrounding woodlands.
